Serves 10-12 Cooking Time: 35 minutes
Ingredients:
- 1 prepared uncooked pie crust
- 10 eggs
- 1 cup of half and half
- 1/2 cup of heavy cream
- 1 handful of basil, julienne
- 1 handful of flat leaf parsley, chopped
- 2 tomatoes, sliced
- 1 cup of mozzarella, shredded
- 1/4 tsp. nutmeg
- salt and pepper to taste
Directions:
Prepare a pie dish with pan spray.
Place pie crust in pie dish.
In a bowl mix all other ingredients except tomatoes and mozzarella.
Pour into unbaked pie crust.
Sprinkle with the mozzarella.
Then layer top with the sliced tomatoes
Bake at 400 degrees for 35 minutes.
