Southwest Chopped Salad

roasted corn on the cob

Serves 8 to 10            Prep Time: 20 minutes

Ingredients:

  • 2 to 3 heads of romaine, chopped
  • 1/2 cup cilantro leaf
  • 1/4 cup green onion, chopped
  • 1 medium red onion, chopped
  • 1 can of black beans, rinsed and drained
  • 1 can of red kidney beans, rinsed and drained
  • 1 14 to 15 oz. can of corn, drained
  • 1 10 to 12 oz. jar of roasted red peppers, drained and chopped
  •  2 to 3 avocados, chopped

Directions:

Mix romaine, cilantro and green onion, place in a large bowl.

Top lettuce mixture with piles of beans, corn, avocado, roasted red pepper, red onion and avocado.

Serve with Cilantro Lime Yogurt Dressing
