Chicken Salsa Verde

Serves 14-15         Cooking Time 40 to 45 minutes

Ingredients:

  • 1 jar of verde sauce
  • 1 medium onion
  • 3 to 4 cloves of garlic
  • 1 handful of cilantro
  • 1 jalapeno
  • 2 to 3 Serrano chilies
  • 2  8 oz. packages of cream cheese, softened
  • 2 cups of Monterrey lack cheese, shredded
  • 8 to 10 boneless, skinless chicken breasts

Directions:

In a small saute pan, mix the verde sauce, onion, garlic, cilantro, jalapeno and chilies. Bring to a boil, then simmer for about 4 to 5 minutes.

Spray a 9 x 13 baking dish.

Slice each chicken breast lengthwise, flatten and tenderize with a meat mallet.

Place  chicken in a single layer into baking dish.

Pour the warn verde sauce mixture over the chicken.

Spread the cream cheese over the top of the sauce.

Sprinkle the monterrey jack cheese over the sauce.

Bake at 350 degrees, for 40 to 45 minutes until chicken is done.

Serve with Black Bean Rice.
