Black Bean Rice

Serves 8 to 10         Cooking Time 30 minutes

Ingredients:

  • 3 cups of long grain rice
  • 1 medium onion
  • 2 to 3 cloves of garlic
  • 1 carrot, shredded
  • 1 can black beans, rinsed and drained
  • 1 cup of  cilantro, chopped
  • salt to taste
  • olive oil

Directions:

Cook rice according to directions, and set aside.

In a large pan, saute the onion in olive oil  for 2 to 3 minutes, then add garlic and saute another 2 to 3 minutes.

Add the shredded carrot and saute another 2 minutes.

Turn up the heat and add in the drained black beans and cilantro.

To the pan, mix  in the cooked rice add and salt to taste. Heat thoroughly.

Serve with Chicken Salsa Verde.
