Artichoke and Bean Salad with Chipotle Ranch Dressing

Serves 14-15         Prep Time 30 minutes

Ingredients:

  • 1 15 ounce can of garbanzo, rinsed and drained
  • 1 15 ounce can of black beans, rinsed and drained
  • 1 jar of marinated artichoke hearts
  • 1 red bell pepper, chopped
  • 1/4 cup green onion, chopped
  • 1/3 cup cilantro, chopped
  • 1 English cucumber, seeded and diced into small cubes
  • 1/2 cup ranch chipotle dressing, store bought (Sprouts brand)
  • 1/4 tsp salt and pepper

Directions:

Place the drained beans in a bowl, set aside.

Chop the next 5 ingredients and mix in with beans.

Mix all together and add in the salt, pepper and dressing.

Let chill in the refrigerator for 1 to 2 hours before serving.
